Apple and Peanut Butter Tart Recipe
For one more recipe with apples this month, I decided to revisit a classic: the French apple tart! And I added a delicious twist to it.
On one of my trips to Massachusetts last year, I was introduced to a snack of apple slices with a thin spread of peanut butter by E.'s sister-in-law. I thought the combination was really tasty and I later found it as a food pairing in the wonderful Flavour Thesaurus by Niki Segnit (one of my food bibles).
On a cold Autumn day, I really love eating a simple dessert and preferably a delicious French apple tart. I decided to add a small layer of smooth peanut butter on the dough before adding the apple puree and apple slices. The combination of ingredients worked wonderfully. I used apples of the Cox variety as they are great for apple-based baked desserts.
The pastry is thin and buttery and welcomes really well the sweetness of the apples and the texture of the peanut butter (I could say nuttiness but it is almost too obvious). It is a dessert that makes you want more of it but maybe keep some for later, or even better, share it with your family and friends!

Apple and Dulce de Leche Crumble Recipe
Let's have an apple crumble. No wait... Let's have an apple AND dulce de leche crumble!
It's true, why would you just stop at apples when you could add some wonderful dulce de leche (milk jam) and make it the indulgent dessert you truly deserve this Autumn. It even has a delicious gluten free crumble mix that has good things such as oats and nuts in it.
This dessert has wonderful flavours and you would nearly want to eat it straight from the dish out of the oven. But it's nice to let it cool down a bit so you can scoop some out into a little serving bowl. Curl up on the couch with a book and enjoy every single spoonful of your warm dessert. It may be cold outside (and even pouring rain!) but that little moment is heavenly.

For this dessert, choose apples that are suitable for baked desserts, they will soften much faster in the cooking process. I got some from the Cox variety and they were just perfect for this dessert.
As for the dulce de leche, I know it can be found around (look also for milk jam or confiture de lait) but it is easy to make yourself too, there are some good recipes online (I put a link under the recipe). It is also too easy to eat it on its own so make sure you keep enough for your crumble!

Baked Apples with Meringue and Nuts Recipe
Last month, I told you about my little cooking day with Rebekah. We used a lot of blackberries and the recipes I came up with were a delicious fruit salad and savoury sauce, and some really-easy-to-eat-fast blackberry, white chocolate and almond rochers.
Having been both quite busy over the past few weeks, we did not get to meet for another cooking session but there was still a lovely theme to work with: apples.
Between processing and editing photos for a few clients, and working on my little photography business, I found a bit of time to come up with recipes using apples. The first I share here is for baked apples.
